INGREDIENTS


  • 1 cup raisins
  • 2 cups all-purpose flour, divided

DIRECTIONS

1.      Toss raisins with 2 tablespoons flour; set aside. In a large mixing bowl, combine the brown sugar, baking powder, cinnamon, and baking soda, salt and remaining flour. Add oil and eggs; beat well. Stir in carrots and reserved raisins.
2.      Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake at 325 degrees F for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
3.      For frosting, in a large mixing bowl, beat cream cheese and butter until smooth. Beat in orange juice and vanilla. Gradually add confectioners' sugar; beat until light and fluffy. Spread over cake. Store in the refrigerator.

4.      In a medium bowl, combine shredded carrots, coconut, walnuts, pineapple and raisins.
5.      Using a large wooden spoon or a very heavy whisk, add carrot mixture to batter and fold in well.
6.      Pour into prepared 8x12 inch pan, and bake at 350 degrees F (175 degrees C) for 1 hour. Check with toothpick.
7.      Allow to cool for at least 20 minutes before serving.

2.      In a large, high sided saucepan, heat cream over medium high heat, stirring frequently, until it starts to boil. At this point, the cream will want to boil over, so keep an eye on it! Immediately remove from heat and pour over chopped chocolate.
3.      Stir until chocolate is completely melted and mixture is smooth. Cool completely and then store in refrigerator. Ganache can be reheated in a stainless steel bowl over hot, but not boiling, water.

Boil for 2 minutes. Stir in the vanilla, then pour over the popcorn. Stir until the popcorn is well coated. Spread the popcorn into the prepared pan.
3.     Bake in preheated oven for 30 minutes, stirring several times.
4.     Remove from the oven, and allow cooling to room temperature. Break into small clumps, and store in an airtight container.
